Here's what you'll need..
Ingredients:
1 pack of thick, skinless, boneless chicken breast
2 cups of grapes (cut in half)
2 cups of strawberries (sliced)
2 cups of oranges (sectioned, I love a good looking orange slice! For this salad I section and then cut it in half to be bite sized.)
2 cups of walnuts (almonds are also great, but if I have a choice I use the walnuts.)
Couple of handfuls of Feta cheese
Green Leaf Lettuce (you cold also mix in some spinach)
Olive oil or Coconut oil
Newman's Own Honey Mustard Dressing, I've made a few dressings from scratch, and while they are super simple to make, they're not as simple as twisting off a cap.. lol.. And these days with my precious little girl Olivia
literally getting into EVERYTHING, like climbing into toilet bowls, pushing chairs across the kitchen to climb onto the stove to play with the burner knobs.. Taking off her diapers all day, even while out! Finding her way in all of my sinks/ tub.. Abusing the dogs bottom... Oh, I can go on and on.. Anyway, I'm not complaining, just saying why these days I find great comfort in buying as many store bought, healthy items as I can.. =)
Moving on..
Method:
Season chicken to your taste. I use salt, pepper, and garlic powder... Oil your pan, just enough to cover.. I almost always pan sear my meat, whichever kind I am making. After the chicken has seared on both sides (about two minutes on each side) I place the pan in the oven at 350* for 25 minutes.. This gives me the juiciest, tastiest chicken EVER.. Remember to always let your meat stand for 5 to 10 minutes before carving to allow the juices to redistribute.. If cut too soon all of the juices will run out.
While the chicken is in the oven I'm washing, slicing, and assembling my salad. Sometimes I cut the chicken in cubes and toss everything together. I didn't do that with this meal in the photo.. Everything but the chicken is all tossed together, with the cheese sprinkled on top.
As with any recipe, modify to suit your needs and tastes. Red onion is a fine contribution, but I didn't do that here either. Raspberries and mango also work well, but these particular ingredients are so far our favorite combos..
Serves 4 to 6 people.
